You can actually retrieve your original horse, Pebbles! Travel to Semine in the south and speak with the horse trader. However, he won't simply hand her over. You'll need to either pay him Groschen, persuade him, or intimidate him into relinquishing Pebbles. During my playthrough, aligning with Radovan the blacksmith and acquiring more refined clothing helped convince the trader to release Pebbles without payment, although it did slightly impact my reputation in Semine.
If persuasion fails, you'll need to pay the required Groschen to regain Pebbles.
Stealing a Horse

Alternatively, you can steal a horse. While wild horses are rare, you'll find them on farms and in stables. Stealing carries the risk of being caught by the owners.
I suggest visiting Vidlak Pond in the west. A farmhouse belonging to fishermen contains two horses. Simply mount one and ride away.
Next, visit the Nomads' Camp east of Vidlak Pond. The horse trainer NPC there can teach you how to saddle and tame your newly acquired horse, though you'll need to pay for their services. You can also choose to forgo this step and ride the horse untamed.
